We love to share our Fair friends’ success stories! The recipe below was created by Fair friend Diane Davis. Several years ago Diane entered this Golden Spice Ring Cake in the Harvest Fair and won a second place her efforts.
Do you have a recipe, a photo, or a picture of a fair entry that you entered at the Fair? If so, send us a message with the details. As we gear up for Fair season, we’d like to feature some of the photos/recipes/ideas with others on this page. For now, enjoy this awesome recipe. Thanks, Diane, for sharing!
Golden Spice Ring Cake
By Diane Davis
1 ¼ cup sugar
1 cup canned pumpkin
½ cup vegetable oil
1/3 cup water
1 ¾ cups sifted flour
¾ teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1 cup quick rolled oats, uncooked
Beat eggs until frothy; gradually add sugar. Beat until thick and lemon colored. Stir in pumpkin, oil and water. Mix and sift salt, flour, baking soda, cinnamon and nutmeg. Add to pumpkin mixture. Stir in oats. Pour into greased and floured 1 1/2 quart ring mold. Bake at 350 degrees for 45 minutes. Loosen edges with knife or spatula. Cool 10 minutes, then invert on serving plate. Cool and top with Orange Butter Frosting.
Orange Butter Frosting
2 tablespoons butter or margarine
3 tablespoons orange juice
Few grains salt
2 ½ cups confectioners’ sugar
1 teaspoon grated orange peel
Cream butter. Gradually add sugar, alternating with enough orange juice to make frosting right consistency for spreading. Stir in orange peel and salt.
